The Sirloin Explained
The Sirloin is a premium cut of beef located between the fillet and the rib of the cow. This particular location provides the Sirloin with a balance of tenderness from the fillet and rich flavour from the rib. Quality You Can Taste
When buying a steak to cook at home, it’s important to go to a trusted butcher who knows exactly where the meat has come from. At Miller & Carter, for example, our Sirloin steaks are sourced from carefully selected farms, where our cattle are grass-fed and matured for at least 28 days. This results in a steak that is tender, flavourful, and of the highest quality. We believe that the best steaks start with the best beef, and our stringent sourcing process ensures that every Sirloin steak we serve meets our high standards. That’s why we’d suggest having that chat with your local butcher, get to know the provenance of the meat you’re buying and get yourself the best possible quality ingredients when planning your meal. Cooking the Perfect Sirloin
Our steak master chefs are adept at bringing out the best in every Sirloin steak. Each steak is seasoned simply with sea salt and black pepper to enhance - not mask - its natural flavours. The steaks are then seared to perfection on a hot grill, creating a flavourful crust while keeping the interior juicy and tender. However you have your steak, our chefs ensure your Sirloin is cooked exactly to your liking. At home, if there are any large chunks of fat on the outside of your steak, trim them off (or ask your butcher to do so when you purchase your steaks). Next, seasoning: a simple sprinkling of salt and pepper will allow the flavour of the steak to shine. If you want to marinate your steak, a simple marinade of olive oil, garlic, and herbs can add depth and add intensity to the flavour, too. Finally, let your steak rest at room temperature for about 30 minutes before cooking. This will help it cook more evenly. With regards to cooking, the Sirloin will lend itself to a variety of cooking methods – all of which have very similar cooking times:
Pan-Searing: Heat a heavy-bottomed pan over high heat. Once the pan is hot, add your steak. Cook for 2-3 minutes on each side for medium-rare, or until it reaches your desired level of doneness.
Grilling: Preheat your grill to high. Grill your steak for 2-3 minutes on each side for medium-rare, or until it reaches your desired level of doneness.
Broiling: Preheat your broiler. Place your steak on a broiler pan and broil for 2-3 minutes on each side for medium-rare, or until it reaches your desired level of doneness.
At home, potatoes, grilled vegetables or a simple salad all pair well with Sirloin too. Remember, these times are just guidelines and the exact cooking time will depend on the thickness of your steak and your personal preference.
